<p>-Spalati, apoi pasati pestele cu mixerul. Puneti pestele pasat intr-un castron si adaugati miezul de paine inmuiat in prealabil in lapte si stors, tarhonul curatat si sucul de lamaie. Amestecati totul astfel incat sa obtineti un amestec omogen. Adaugati un praf de sare. Faceti rulouri. Intr-o tigaie rumeniti crochetele 4 minute. Serviti-le apoi cu pireul de conopida incalzit.</p>

<p>- Se pune pestele intr-o tigaie si se adauga untul, laptele, supa si frunza de dafin si se aduce la punctul de fierbere. Se da focul la mic, se acopera tigaia si se lasa 10–15 minute pana este gata. Se incearca cu o furculita daca s-a fiert. Dupa ce s-a fiert se scoate pe o farfurie, se acopera si se tine la cald. Sosul ramas se mai fierbe 5 minute la foc mic, dupa care se da la o parte si se scoate frunza de dafin. Intr-o craticioara se pune untul si faina si se amesteca la foc mic pana se omogenizeaza, timp de 1 minut. Se ia de pe foc si se adauga treptat sosul in care a fiert pestele. Se pune din nou craticioara pe foc, se da in clocot si se mai lasa inca 5 minute amestecand mereu. Se ia sosul de pe foc, se amesteca galbenusul cu smantana si se pune peste sos. Se pune pe foc sa se incalzeasca, si nu se da in clocot. Se ia de pe foc si se adauga coaja si zeama de lamaie, patrunjel tocat,o jumatate de legatura. Sosul rezultat se toarna peste peste. Se poate servi cu cartofi fierti, piure.</p>

<p class="style9"><em>-2 kg stiuca, 3 cepe mari,500 g fasole verde,3 rosii decojite, ulei, suc de   rosii, vin alb, sare, foi de dafin.</em></p>

<p class="style9">-Se curata stiuca, se cresteaza pe ambele parti, se sareaza si se condimenteaza dupa gust, se pune intr-o tava, pe pat de ceapa taiata pestisori si fasole, la cuptor, cu 50ml ulei si cca 200ml apa. Se prepara un sos din: doua cepe mari taiate marunt si prajite in ulei la care se adauga sare, trei rosii decojite si taiate cuburi, 200 ml supa, 100 ml suc de rosii, doua frunze de dafin. Dupa ce sosul ese bine fiert se adauga 250 ml vin alb sec. Dupa ce stiuca a stat 20 min la cuptor, se intoarce, se toarna sosul deasupra si se mai lasa inca 20-30 min in cuptor.</p>

<p><span class="style9">1 Spalati oTezul in apa rece, apoi puneti-l intr-o cratita impreuna cu 300 ml apa. Când clocoteste, acoperiti-l cu un capac, reduceti flacara si lasati-l sa fiarba la foc mic circa 10 minute, apoi stingeti focul si lasati orezul acoperit sa mai fiarba in aburi inca 10 minute.<br />
2 intr-o cratita mica incalziti otetul, in care ati pus zaharul si sarea; când zaharul s-a dizolvat complet, turnati otetul peste orezul fiert si amestecati bine. Desertati orezul pe un platou intins si afânati-l.<br />
3 Asezati o foaie de sushi nori pe un suport pentru sushi (daca nu aveti asa ceva, improvizati, folosind o bucata de material textil tare, putin mai mare decât foaia de sushi nori) si intindeti pe ea jumatate din orezul racit, apoi asezati la marginea acestuia jumatate din somon si din fâsiile de castravete.<br />
4 Rulati orezul si somonul afumat cu ajutorul materialului-suport. Umeziti lama unui cutit foarte ascutit si taiati ruloul astfel format in bucati de circa 2 cm. Repetati operatia cu cealalta foaie de sushi nori, orezul, castravetele si somonul afumat ramas. Serviti cu wasabi, sos de soia si ghimbir murat.</span></p>

-Pestele se curata, se împarte în portii, se sareaza si se lasa sa se scurga. Ceapa se taie marunt si se caleste în 100 ml ulei, peste care se pun ciupercile taiate. în acest sote se toarna bulionul, vinul si apa si se lasa sa dea un clocot. Se unge o tava cu ulei, se presara câteva boabe de piper, se aranjeaza bucatile de peste, peste care se varsa sosul de ciuperci, se presara sare, piper pisat, patrunjel tocat marunt. Se coace la cuptor circa 35 de minute. Somul se serveste cald, cu patrunjel tocat pe deasupra.</span></p>

<p>- Toate ingredientele uscate se amesteca si se pastreaza doar o jumatate din ceasca de faina. Se bat ouale separat si apoi se toarna laptele. Pestele se spala si apoi se usuca. Fileurile se dau prin faina, prin ou si apoi prin mixtura. Se pun la frigider intr-un vas acoperit pentru 2 ore. Se prajesc apoi in ulei incins pe ambele parti, intorcandu-se doar o data.</p>

Carnea afumata se taie in cuburi si se pune la fript, apoi se pun la fript fileurile de peste, fiecare parte timp de 3 minute pina primesc o culoare maronie. Se toarna Riesling, se pune capacul si la cea mai mica flacara se frige inabusit timp de 10 minute. Se scoate pestele, se sareaza usor si se tine la cald pe o plita incalzita in prealabil. Se amesteca gelatina in apa si se adauga la zeama fripturii dupa care se da citeva clocote. Se pune galbenusul in smintina si se amesteca in sosul care nu mai clocoteste. Se ia oala de pe cuptor si se adauga sare dupa gust. Se toarna apoi sosul peste fileurile de peste si se garniseste cu patrunjel verde taiat si cu felii de lamiie Mod de servire Se poate servi ca si garnitura cu sparanghel sau cartofi prajiti</p>

<p class="style9">- Se pune intr-un vas lung, sau intr-un vas special de fiert pestele intreg, 1 litru apa, sa fiarba cu zarzavatul de supa si celelalte ingrediente. Intre timp se curata pestele pe dinauntru si pe dinafara. Se ia vasul cu apa de pe foc ca sa inceteze clocoltul si se asaza pestele. Nu trebuie sa fie lichid mai mult decat sa cuprinda pestele. Se pune la foc si se lasa sa fiarba in clocote mici, 20-25 minute. Se incearca daca este fiert, smulgand o aripioara. Daca aripioara se desprinde usor, este gata. De asemenea, daca un varf de furculita sau un alt obiect ascutit intra usor in carnea pestelui.<br />
Cand pestele trebuie servit cald, atunci se scoate din apa fierbinte si se serveste imediat, insotit cu un sos cald de unt. Se pune pe o farfurie lunga si se garniseste cu cartofi, felioare de morcov, buchetele de patrunjel si felii de lamaie, asezate in jurul farfuriei pe care a fost asezat pestele. Cand rasolul se serveste rece se lasa pestele sa se raceasca in apa in care a fiert, apoi se scoate pe farfurie, se garniseste ca mai sus si se serveste cu un sos de maioneza sau alt sos rece, sau simplu, cu otet si untdelemn.</p>

<p class="style9">-Cel mai gustos bors de peste se prepara din peste viu sau foarte proaspat (crap, cega, biban). Ciorba se poate gati, de asemenea, din salau sau cu diferiti pesti marunti, cu exceptia carasului si linului. Pentru ca ciorba de peste sa aiba consistenta gelatinoasa necesara, se fierb intii pestii marunti (ghigorti si biban), necuratati de solzi, dar fara mate si bine spalati. La biban trebuie scoase si branhiile, altfel supa capata un gust amarui. Pestele astfel pregatit se pune in oala, se adauga apa rece, zarzavat si ceapa curatate, sare, foi de dafin. Se fierbe totul la foc potrivit, intre 40 minute si 1 ora. Dupa aceea supa se strecoara si se pune din nou la fiert cu bucati de peste mare si cu frunze de leustean. Se pot adauga in ciorba cartofi cruzi taiati, care se pun in zeama inainte de peste deoarece acesta fierbe mai repede. Se acreste cu bors sau sare de lamiie.</p>

<p>-Se cresteaza scrumbia la abdomen, se curata, se spala si se pune in apa ca sa se desareze. Apa in care se tine scrumbia trebuie schimbata de citeva ori. Se lasa la desarat 24 de ore. La urma, scrumbia se tine citeva ore in lapte pentru a se desara si mai bine, se sterge, se curata pielea si se taie capul. Se inlatura sira spinarii si oasele, crestindu-se scrumbia de-a lungul, apoi se ruleaza. Ceapa se curata, se spala, se taie rotocoale subtiri si se aranjeaza de jur imprejur. In timp ce scrumbia sta la desarat, se fierb ouale tari, se pun in apa rece pentru a se decoji mai usor, se curata, se lasa sa se raceasca, apoi se taie in sferturi care se aranjeaza in jurul scrumbiei, peste rotocoalele de ceapa. Se curata maslinele, se taie in doua, se scot simburii si se pun din nou in loc linga oua sau deasupra lor.</p>
